This just might be my favorite Mexican dish…every time that I’ve seen it on a menu I have instantly jumped over all of the other options to order it.

It varies a little from one restaurant to another, but I’ve never been disapointed. Never.  It’ perfect in burritos, soft corn tortillas or with eggs for breakfast.  I LOVE Machaca!

Alright so let’s get down to it…here’s my little adaptation of Machaca:

    Mmmm, I love pretty much all Mexican food, but machaca is definitely delicious. I’m from Arizona, but I live in NYC now and I miss all the great Mexican food. Thanks for the recipe.

    Ooh, we have all these ingredients on hand! Don’t you just love when that happens? I think we will be having some machaca for dinner tonight. Thanks so much!

    I should probably point out that it’s 2am right now – thoughts of delicious machaca are probably NOT going to help me fall asleep any faster!
