I L-O-V-E LOVE frozen yogurt with fresh fruit. And at a time when strawberries and pears are ripe for the picking, there is no better time for me to pull out a scoop or two of frozen yogurt. (this compote is also terrific over pancakes)
When I’m making this just for myself, I grab a handful of strawberries and a pear. (recipe below is for 4 servings or for someone who likes to hoarde the goods)
Then slice or dice them up…it just depends on my mood.
TIME SAVING TIP: To have this ready in half the time, rinse and slice your strawberries ahead of time and store them in an airtight container.
Pears need to be sliced when you’re ready to cook them…or they will brown on you (which is not so pretty)
Then drop them into a pre-heated non-stick pan (medium heat). Let them sit there and get those fruity juices going…in fact, we want them to caramelize.
Give them a few stirs then and again. After about 8 minutes of cooking, the fruit should be carmelized and have softened. Take it off the heat.
Grab your favorite frozen yogurt…my favorite to bring the emphasis of the sweet fruit is Trader Joe’s Plain Non-Fat Frozen Yogurt. It’s tart and simply divine with this warm compote spooned over the top. If you prefer something more sweet and less tangy, then grab Dreyer’s Yogurt Blends with Honey.

Pearberry Compote Frozen Yogurt
Prep Time: 15 minutes
Cook Time: 8-10 minutes
Servings: 4
Ingredients:
3 cups Strawberries, sliced
2 whole Pears, sliced
4 cups Frozen Yogurt, divided
Directions:
Preheat a non-stick skillet over medium heat.
Add strawberries and pears to hot skillet.
Allow to caramelize for 8-10 minutes, stirring occasionally.
Remove from heat.
Spoon over frozen yogurt, ice cream or pancakes.
